I’m a big believer that how you start your morning can set the tone for the entire day which is why breakfast is so important! As a busy parent, it’s tempting to grab something quick or just skip breakfast altogether. And, after dedicating your morning to feeding little ones and ensuring they eat, it feels like there’s no time left for yourself.

If you’re nodding your head in agreement good news! I’ve found the perfect hack for staying full and energized all morning: healthy breakfast bowls. These have been a go-to for me lately because they’re super simple to make and packed with tons of nutrients. And, since breakfast is the most important meal of the day, it’s not one you want to skip!

I’ve shared plenty of breakfast recipes, from homemade banana muffins to frozen yogurt cups. But today, I’m sharing my favorite breakfast bowl recipe that you can look forward to heaving each day. Let’s make our mornings a little bit easier together!

It’s no secret that some mornings can feel like true chaos when you have little ones running around. That’s why easy breakfasts, like breakfast bowls, are the key to success. You can toss it together with whichever ingredients you want soft-boiled eggs, greek yogurt, salsa or hot sauce and be good to go!

I don’t just love breakfast bowls for their flexibility; they’re also extremely convenient. You don’t spend a ton of time having to cook or meal prep, which is a HUGE win in my book. It’s definitely a meal that I find myself coming back to more often than not. I’m going to give you my favorite bowl to make, but feel free to switch it up however you’d like!

It’s super easy to swap out a few ingredients to feel like you have new breakfast ideas each day of the week. Whether you want something crunchy, sweet, or creamy, you can find a bowl that will satisfy your cravings every time.

Yes, breakfast bowls can be very healthy! Of course, it ultimately depends on what you put into them. But with so many yummy and wholesome ingredients, it isn’t hard to make them both satisfying and healthy. Let’s discuss a few key ways to ensure your breakfast bowl is perfectly balanced.

A well-balanced breakfast bowl typically includes a mix of protein, fiber-rich carbs, and healthy fats. So, what exactly does that look like? If you want more protein, consider using eggs, meat, veggies, Greek yogurt, or even nut butter. For fiber, you can use oats, fruit, or quinoa. And for healthy fats, avocado, chia seeds, and any sort of nut is a great choice.

Taste and satisfaction are crucial parts of breakfast, but don’t forget that the right blend of ingredients will help you feel energized and ready to take on the day. And, since these bowls are so easy to customize, you can have fun adding extra vitamins, minerals, or antioxidants if necessary.

How To Make A Healthy Breakfast Bowl

Ingredients: 

  • 2 large eggs for protein

  • 3 slices of chopped bacon for extra protein

  • 1 diced sweet potato for vitamins and antioxidants

  • 2 tbsp of Greek yogurt for probiotics

  • ½ avocado for healthy fats

  • 1 cup fresh spinach or kale for vitamins

  • 2 tbsp of crumbled feta or goat cheese to flavor boost

  • 1 tbsp of olive oil for sauteing 

  • 1 tsp of minced garlic for flavor

  • Salt and pepper (and additional seasoning) for flavor

Steps: 

  • Roast sweet potatoes on a sheet pan: Preheat the oven to 400°. Toss your cubed sweet potatoes in ½ tablespoon olive oil, salt, and pepper. Spread them onto a large sheet pan lined with parchment paper for easy cleanup. Roast for about 20 minutes. 

  • Sautee your greens: While the potatoes roast, heat a large skillet over medium. Add the remaining ½ tablespoons of olive oil and a tsp of minced garlic. After a minute or so, toss in your spinach or kale. Cook for 1-2 minutes until the greens are wilted, and then place them in a bowl or on a plate. 

  • Cook eggs over medium heat: In that same skillet, crack in your eggs and cook them to your desired preference. Make sure to keep medium heat so the eggs cook evenly! Season as you’d like. 

  • Cook and prepare meat: Lay your bacon strips in a dry pan. Cook them on low heat, occasionally flipping, until they become golden brown. Once they’re at your desired crispiness, place them on paper towels to absorb excess grease.

  • Prepare your bowl: Now that you have all of your ingredients prepped and ready, it’s time to assemble your bowl! Layer in your sweet potatoes, sauteed greens, avocado, and eggs. Top with 2 tbsp of Greek yogurt and crumbled feta/goat cheese, and you’re ready to eat!

The best thing about this breakfast bowl? You can prep it ahead of time and store it in the fridge or freezer for a quick and convenient morning meal! Spend just 30 extra minutes after the kids go to bed to meal prep, and you’ll save yourself valuable time during busy mornings.

Once you’ve cut and cooked your veggies and prepped your greens, place them into airtight containers or these snack box sets if you have them! If you use boiled eggs, remember to submerge them in cool water before storing them. Cooked eggs, on the other hand, will stay fresh for 3-4 days as long as they’re properly stored.

Now, all you have to do in the morning is put everything together, reheat it in a microwave-safe bowl, and add your toppings! It’s an efficient way to save yourself time and ensure a healthy breakfast.
